Part of Last Night's Dinner

Baba Ghanoush 

  • 1 eggplant
  • 1/4 cup lemon juice
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • salt and pepper to taste
  • 1 1/2 tablespoons olive oil
  • Paprika and olives as garnish

We baked our eggplant whole and unpeeled in the oven @ 400 degrees F for 1 hour. We then peeled the eggplant and put all the ingredients in food processor and blended until smooth.  SO DELICIOUS and a great way to use the 10,000 eggplants we are getting in our CSA.
